Metronome Restaurant – Here’s Their New Tasting Menu

Elegant Metronome Restaurant introduces new tasting menu treat carefully by chef and co-owner Miko Calo.

METRONOME RESTAURANT – Expect a burst of flavor and elegance from the newly-launched tasting menu of Metronome restaurant.

French restaurant Metronome is located in Makati. Their offerings are made up of hearty French fare. chef Miko Calo is Metronome’s head chef and part-owner. They have ala carte dishes but what many people loved about this place is their tasting menu.

And recently, the head chef launched a new tasting menu consisting of dishes with premium ingredients for premium taste.

In this new tasting menu, the chef admitted that she played safe in order to give Filipinos the experience they expect in French cuisine.

Her new tasting menu included a beetroot salad topped with dehydrated chips. This has a smooth fennel puree under Roquefort espuma. The crisp and mash texture of this dish collides so well inside the mouth. The apricot granita is a balance to the taste of the beets and blue cheese.

Another is the slow-roasted pigeon breast composed of pigeon leg confit, salted black bean puree, kamias caramel, pinipig, foie gras, and pigeon jus.

Their pâte á choux comes with local seaweed called game mixed with mousseline stuffing. This is topped with Kaluga Queen caviar.

The malunggay pistou would also hit differently. It comes with hazelnut gnocchi Parisienne in pork consomme. Take note, each plate of this stresses elegance as expected from a Metronome dish.

Another must that will surely introduce wild flavors to the tongue is their cognac-glazed main lobster lying in the bed of fregola, lobster bisque, guanciale, tomato confit, cured egg yolk, olives, capers, calamansi, and saffron. 

According to a post from Tatler, the chef shared that this dish is inspired by pancit langlang which she tried during a visit Arayat, Pampanga, and her Tita Susan’s callos.

Pastry chef Ginno Hernandez did the desserts.
